Don't Forget: Raw oysters may be contaminated with Vibrio bacteria, especially in warmer months of the year. Cooking oysters will kill the bacteria and prevent Vibrio infection. See our Vibrio fact sheetPDF for more information.

The FS&ES Program is dedicated to overseeing food safety and environmental sanitation monitoring and regulatory activities in the State of Arizona in accordance with various Arizona Revised Statutes and Title 9, Chapter 8 of the Arizona Administrative Code.

FS&ES actively engages Local County Health Departments and other partners to continuously help improve its statewide public health sanitation program; which includes food, schools, lodging facilities, campgrounds, trailer parks, bottled water, and public swimming pools and spas. The FS&ES also provides certification and training for Arizona Registered Sanitarians.
